Ingredients 300 grams ginger 15 grams salt Preparation Time:  10 minutes Cooking Steps 1. Rinse clean 300 grams fresh ginger, cut into thin slices, add to a bowl. 2. 盐渍蒜瓣 (Yan Zi Suan Ban) I love fresh garlic, but usually use a small portion, this preserving the fresh garlic clove becomes a challenge. Even I put the clove in a dark room, it still starts growing. Ingredients 80 grams fresh garlic cloves 4 grams salt Preparation Time: 10 minutes Cooking Steps 1. Remove the skin from garlic cloves. 2. Measure 5% salt based on garlic weight. for 80 grams garlic, need 4 grams salt. 3. Place the garlic cloves inside a glass jar, pour the salt in, seal the jar, shake well. 4. 怎样把不锈钢锅变成不沾锅 (Zen Yang Ba Bu Xiu Gang Guo Bian Cheng Bu Zhan Guo) I have been using non sticky pans and woks for many years. They typically last for 2 years for me, and start becoming "sticky" and I have to buy new ones (what a waste!). I did some research online and found one super simple way to turn stainless pans into non sticky pans. Steps 1. Use dish soap to clean a new stainless pan, rinse thoroughly. 2. Use medium heat to heat the pan to let any water evaporate. 3. Add 1-2 tablespoon canola oil (or any other cooking oil), evenly coat the oil to the surface including the inner vertical side of the pan, cover the pan to heat the pan for a few minutes or until some light fume coming up. 4. Turn off heat, move the pan off the heat. 5. Let the pan cool down in room temperature. 6. The pan becomes non sticky now. 7. After each use, avoid using dish soap to clean the pans. Ingredients 1 bunch of fresh cilantro Preparation Time:  10 minutes Drying Time:  1 week or so Cooking Steps 1. Clean one bunch of fresh cilantro, drain, cut into small bits, spread on a large alum sheet. 2. Let it dry in room temperature naturally if the room humidity is low. Flip occasionally to let all sides of the leaves dry. 3. This process could take a few days or a week. 4. If you use small tabletop oven to toast or bake other food, just place the alum sheet with the cilantro on top of the oven, the heat will speed up the dehydration process.
