Sichuan Style Spicy Tilapia Stew ( 四川麻辣鲫鱼)

四川麻辣鲫鱼 (Si Chuan Ma La Ji Yu) Do we all crave fish from time to time? I do. And Sichuan spices always stimulate the appetite big time. This is my first experiment to make Tilapia stew using very spicy Sichuan chili and peppercorn oil. The resulting dish is absolutely mouth watering. Free range chicken always tastes better than mass farm raised chicken. Sometimes some Chinese supermarkets carry them. I happened to buy one recently and could not wait to make a stew out of it. Head, neck, wings, thighs and drumsticks were used in this dish, the body went to  Spicy Sichuan Style Chicken Salad . Essentially a 4 pound chicken can make 2 dishes. In some busy workday nights, I make super simple and quick pan fried chicken drumstick . Roasted chicken  results in probably the most tasty and tender meat. Mixed Meat Soup with Spring Bamboo Shoots (上汤春笋)

上汤春笋 (Shang Tang Chun Sun) Winter may not be my favorite season, but it offers such a wonderful opportunity to play with all kinds of soup. Recently I had a success with a meat broth mixed with pork bone and chicken . It is time for more fun, in this recipe I added frozen spring bamboo shoots to the soup. Note that fresh bamboo shoots are scarce and pretty expensive when in season. Canned bamboo shoots usually have a weird smell. Frozen version is much more economic and available year round. It retains the crispy texture and has no odd smell. Meat bone soup usually takes a long time to simmer.
