Get 1 yam about 1 lb., rinse clean, use a knife to remove the skin, cut into 3/4 inch wide 2 inch long slices. This takes about 5 minutes. 2 Add 2 tablespoon canola oil to a non sticky flat pan, place the yam slices evenly, cover the pan.
