Ingredients 1 lb. fresh Bok Choy Scape (available in some Chinese supermarket, abundant from spring to fall). 2 tablespoon canola oil 1/2 teaspoon salt Preparation Time: 10 minutes Cooking Time: 10 minutes Servings: 4 Cooking Steps 1. Buy fresh Bok Choy scape from Chinese supermarket. Measure 1 lb. portion. Soak the scapes in a large bowl of tap water, use fingers to remove any dirt. Take them out then rinse one more time. 2. Cut the scapes into thinner pieces to make the cooking easier, some scapes can be pretty thick. 3. Get a large wok or pan (with no water in it, cold water heated with oil will explode), add 2 tablespoon canola oil, let it heat for 2 minutes or so using high heat. 4.
