Stir Fried Bok Choy Scape (清炒菜苔)
Stir fried Bok Choy scape is no doubt my favorite vegetable dish. It is fresh with crunchy texture, the dark green leaves make it such a healthy dish.

Ingredients
- 1 lb. fresh Bok Choy Scape (available in some Chinese supermarket, abundant from spring to fall).
- 2 tablespoon canola oil
- 1/2 teaspoon salt

Cooking Steps
1. Buy fresh Bok Choy scape from Chinese supermarket. Measure 1 lb. portion. Soak the scapes in a large bowl of tap water, use fingers to remove any dirt. Take them out then rinse one more time.
2. Cut the scapes into thinner pieces to make the cooking easier, some scapes can be pretty thick.
3. Get a large wok or pan (with no water in it, cold water heated with oil will explode), add 2 tablespoon canola oil, let it heat for 2 minutes or so using high heat.
4. Add the cut scapes to the pan, sprinkle a little bit canola oil to the top of the vegetable.
5. Let it cook for 5 minutes using high heat.
6. Then turn heat to medium, add 1/2 teaspoon salt, stir to let the scapes coated evenly with oil and salt.
7. Stir fry for another 3-5 minutes to fully cook the vegetable.
8. Place the scapes nicely (in one direction) onto a plate.
