Chinese Rice Cake with Vegetables (蔬菜年糕)

蔬菜年糕 (Shu Cai Nian Gao) Rice cake is a lucky food for Chinese new year. This dish is very simple to make, the red pepper adds the traditional lucky color to the dish. Ingredients 1.5 lb. rice cake  1/3 lb. bok choy scape 3 cups of chicken stock A few red mini pepper 2 tablespoon canola oil 1 pinch of salt Preparation Time: 5 minutes Cooking Time: 40  minutes Servings: 6-8 Cooking Steps 1. Get 1 pack Chinese rice cake slices. 2. Get a large pan, add 3 cups of chicken stock, boil. 3. Add the rice cake slices to the stock, separate the slices evenly, boil, then simmer for 25 minutes, or until the rice cake becomes soft. 4. Ingredients 2/3 lb. bok choy 1 zucchini A few red mini pepper 1 jalapeno pepper 2 tablespoon canola oil 1 teaspoon salt 1 teaspoon black pepper Preparation Time: 15  minutes Cooking Time: 15 minutes Servings: 4 Cooking Steps 1. Get varieties of vegetables and rinse clean. This recipes uses Chinese bok choy (2/3 lb.),  1 zucchini, half red onion, a few red pepper, 1 jalapeno pepper. 2. Coarse chop the vegetable, place in a large mixing bowl. 3. Add 1 teaspoon salt, 1 teaspoon black pepper, 2 tablespoon canola oil. 4. Mix the vegetables evenly. 5. Stir fried Bok Choy scape is no doubt my favorite vegetable dish. It is fresh with crunchy texture, the dark green leaves make it such a healthy dish. Ingredients 1 lb. fresh Bok Choy Scape (available in some Chinese supermarket, abundant from spring to fall). 2 tablespoon canola oil 1/2 teaspoon salt Preparation Time:  10 minutes Cooking Time:  10 minutes Servings: 4 Cooking Steps 1. Buy fresh Bok Choy scape from Chinese supermarket. Measure 1 lb. portion. Soak the scapes in a large bowl of tap water, use fingers to remove any dirt. Take them out then rinse one more time. 2. Cut the scapes into thinner pieces to make the cooking easier, some scapes can be pretty thick. 3. Get a large wok or pan (with no water in it, cold water heated with oil will explode), add 2 tablespoon canola oil, let it heat for 2 minutes or so using high heat. 4. Chinese soups tend to have simple ingredients and keep the original flavor of the ingredients, be it meat, egg or vegetable. This simple egg drop soup is no exception, I added fried pork rind to have a different texture and flavor. 青菜肉丝汤 (Qing Cai Rou Si Tang) Bok Choy is the ultimate green leafy vegetable that Chinese people enjoy almost everyday. This soup is so easy, it only takes about 10 minutes. Ingredients 3/4 lb. bok choy 1/6 lb. pork meat 3 cups of meat broth or chicken stock A few slices of ginger 1 green onion (why buy from store? grow your own green onion ) Preparation Time:  5 minutes Cooking Time: 5 minutes Servings: 4 Cooking Steps 1. Add 3 cups of home meat broth or home chicken stock to a medium size pot, boil. 2. Cut 1/6 lb. pork meat into thin and narrow slices, add to the pot, add a few slices of ginger, boil, the simmer for 2 minute. Remove foams if any. 3. Get 3/4 lb. bok choy, separate the leaves, soak in water, remove any dirt, drain, rinse clean. 4. Cut the bok choy into thin slices, add to the soup, boil for 3 minutes.
