Sichuan Style Spicy Tilapia Stew ( 四川麻辣鲫鱼)

四川麻辣鲫鱼 (Si Chuan Ma La Ji Yu) Do we all crave fish from time to time? I do. And Sichuan spices always stimulate the appetite big time. This is my first experiment to make Tilapia stew using very spicy Sichuan chili and peppercorn oil. The resulting dish is absolutely mouth watering. Ingredients 1 whole cleaned tilapia ( around 1.5 lb.) 2 tablespoon canola oil 3 tablespoon chili oil 1 tablespoon Sichuan peppercorn oil 1 cup chicken stock A few slices of ginger 1 green onion (why buy from store? grow your own green onion ) Preparation Time: 5 minutes with overnight marinating Cooking Time: 60 minutes Servings: 4 Cooking Steps 1. 蒜蓉鱼片 (Suan Rong Yu Pian) This is a super easy and quick recipe to cook fish fillet, garlic and chili add a kick to this simple dish. For more fun cooking ideas, see Recipes by Category . Ingredients 1/2 tilapia fish fillet 1 tablespoon olive oil 1/4 teaspoon salt 1/4 teaspoon black pepper 1 dried red chili Preparation Time: 5 minutes Cooking Time:  10 minutes Servings: 2 Cooking Steps 1. Heat a non sticky pan or wok with medium heat, add 1 tablespoon olive oil, mince 3 cloves garlic, add to the wok, crush one dried red chili, add to the wok, pan fry for 2 minutes to let the aroma come out. 2. Get about 1/2 lb. Tilapia fillet, cut into 1 inch wide pieces, place on top of the garlic and chili. 3. Pan Fried Salmon Belly Stew (红烧三文鱼)

Salmon belly (or side) is the cheaper cut of the salmon, but it is my favorite cut of salmon, this is because it has super tender and fatty texture. Ingredients 4 lb. salmon belly or side strips 6 tablespoon soy sauce 3 tablespoon brown sugar A few slices of ginger 1 teaspoon black pepper 1 teaspoon onion powder 1 teaspoon garlic powder A few dried chili paper, crush into flakes A few slices of ginger 1 green onion (why buy from store? grow your own green onion ) Preparation Time: 10  minutes Cooking Time:  60 minutes Servings: 8 Cooking Steps 1. Buy 4 lb. salmon belly or side cut. 2. Rinse clean and cut the salmon into smaller 2 inch long strips. Place all of them on a large non sticky pan. This steps takes about 10 minutes. 3.
