Chinese New Year Lucky Food: Steamed Shanghai Rice Cake with Osmanthus (上海桂花年糕)

Image
上海桂花年糕 (Shang Hai Gui Hua Nian Gao) Nothing is more traditional than the steamed rice cake to celebrate Chinese new year in southern provinces of China. The pronunciation of rice cake (Nian Gao) is similar to "growing every year", which is a lucky word during the spring festival. This could mean your business, your fortune, your wisdom, your health, your luck, your relationship, etc. I still remember the lovely warm atmosphere when the family gathered together and steamed the huge rice cake in a old fashioned oven in the country side of Shanghai. The wok to steam the cake is usually 2-3 feet wide. Rice cake cab be made as dessert like this recipe, or they can be savory, such as stir fried or made as soup. Checkout more rice cake recipes . Chinese New Year Lucky Food: Steamed Sticky Rice with Eight Treasures (八宝饭)

Image
八宝饭 (Ba Bao Fan) Chinese dessert has many varieties that are so unique and special to its own tradition. I still have the vivid memory of my parents making a special dessert to celebrate Chinese new year, i.e., the steamed sticky rice with 8 treasures. 8 is just a number, it means numerous sweet ingredients used in the recipe, mostly dried fruits and red bean paste. In the old days, making this dessert required lots of effort, it was only made during the spring festival when people had plenty spare time. The hardest part of making this dessert in a traditional way is to make the red bean paste, which took a few hours. It started with simmering the red bean for a couple of hours, then removing the bean skin, consolidating the bean starch, then boiling the bean starch with sugar and pork fat. It was quite a lengthy process. Fortunately these days, we can purchase the ready to use red bean paste from the Chinese grocery stores. Dried fruits can be purchased from stores as well. It c...

Chinese New Year Lucky Food: Spring Rolls with Chinese Leek and Shrimp (韭菜虾仁春卷)

Image
韭菜虾仁春卷 (Jiu Cai Xia Ren Chun Juan) A super delicious traditional Chinese spring roll that uses Chinese leek and shrimp. Spring roll (春卷) is a traditional delicacy that was usually only consumed during Chinese new year, when people had feasts after one year of hard work. Due to the nature of deep frying, they are not typically consumed on a daily basis. Yellow Chinese leek (韭黄) is probably the best spring roll filling. Yellow Chinese leek has a unique flavor, it is usually only available during winter season, it takes special steps to grow, thus it is very pricy. US Chinese grocery stores might carry it in winter times with a high price tag. Use green Chinese leek as alternative, it is equally good. For more fun cooking ideas, see Recipes by Category. Ingredients ( Essential Ingredients for Cooking Authentic Chinese Food ) 1/3 lb. Chinese leek 1/4 lb. shrimp 1/2 tablespoon corn starch 1/2 teaspoon salt and a pinch of sugar 1 teaspoon canola oil. Preparation Time:  10 minu...
