Spicy Sichuan Style Chicken Salad (口水鸡)

口水鸡 (Kou Shui Ji) Free range chicken is the best option to make this dish with its little bit chewy texture of the skin and meat. Free range chicken only available in some Chinese supermarkets. The free range chicken I bought was 4 lb., thus I decided to divide the chicken to make 2 dishes, the head, neck, wings, thighs and drumsticks went to  Chinese Rooster Stew , the rest of the chicken is used for this dish. Thai Style Chicken Salad (泰式凉拌鸡)

泰式凉拌鸡 ( Tai Shi Liang Ban Ji) It is always fun to try different style of cuisine. This simple chicken salad is my first experiment with the unique Thai ingredient such as fish sauce. Chicken leg quarter 2 tablespoon salt for marinating  1 teaspoon salt for cooking the chicken For sauce:  2 tablespoon rice vinegar 2 tablespoon fish sauce 1 tablespoon sugar 2 red chili Fresh vegetable: 1/3 cup cucumber slices 1/3 cup red onion slices 1/3 cup coarse chopped cilantro 1/3 cup crushed roasted peanuts A few slices of ginger 1 green onion (why buy from store? grow your own green onion ) Preparation Time:  10 minutes with overnight marinating Cooking Time: 90 minutes Servings: 4 Cooking Steps 1. Chicken Feet Pickle with Hot Chili Pepper (泡椒凤爪)

泡椒凤爪 (Pao Jiao Fen Zhua) I started experimenting this traditional chicken feet pickle recipe a few times, and I become so addicted. It is such a great side dish or even as snack! Ingredients 2 lb. chicken feet A dozen hot red chili pepper 500 grams cold water (cooled down from boiled water) 35 grams salt 35 grams white vinegar A few drops of white whine A few slices of ginger and 1 green onion A few cloves of fresh garlic Preparation Time: 5 minutes Cooking Time:  60 minutes Servings: 4 Cooking Steps 1. Rinse clean 2 lb. chicken feet (available in most Chinese grocery stores), add to a cooking pot, add water to submerge all the feet, add a few slices of ginger, 1 coarse chopped green onion, a few drops of white wine, boil, then cover and simmer for 1 hour or until the feet have the desired texture.
