Pan Fried Salmon Belly Stew (红烧三文鱼)



Salmon belly (or side) is the cheaper cut of the salmon, but it is my favorite cut of salmon, this is because it has super tender and fatty texture.

Ingredients
  • 4 lb. salmon belly or side strips
  • 6 tablespoon soy sauce
  • 3 tablespoon brown sugar
  • A few slices of ginger
  • 1 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • A few dried chili paper, crush into flakes
  • A few slices of ginger
  • 1 green onion (why buy from store? grow your own green onion)
Preparation Time: 10  minutes
Cooking Time:  60 minutes
Servings: 8

Cooking Steps

1. Buy 4 lb. salmon belly or side cut.
2. Rinse clean and cut the salmon into smaller 2 inch long strips. Place all of them on a large non sticky pan. This steps takes about 10 minutes.

3. Turn on high heat and cover to cook the salmon. This takes about 30 minutes.

4. Take out the lid, use medium heat, let the juice from the fish evaporate. The fat will turn into oil.
    Flip salmon strips a few times to let both sides cook. This step takes about 30 minutes.
5. Add the following spices, stir gently to mix with the fish:

  • 6 tablespoon soy sauce
  • 3 tablespoon brown sugar
  • A few slices of ginger
  • A chopped green onion
  • 1 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • A few dried chili paper, crush into flakes
6. Simmer for a few minutes to let the spices blend with the fish evenly.
7. Serve in nice bowls.
