30 Minutes Roast Vegetables (烤什锦蔬菜)

烤什锦蔬菜 (Kao Shi Jing Shu Cai)

Ingredients
  • 2/3 lb. bok choy
  • 1 zucchini
  • A few red mini pepper
  • 1 jalapeno pepper
  • 2 tablespoon canola oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Preparation Time: 15  minutes
Cooking Time: 15 minutes
Servings: 4

Cooking Steps

1. Get varieties of vegetables and rinse clean. This recipes uses Chinese bok choy (2/3 lb.),  1 zucchini, half red onion, a few red pepper, 1 jalapeno pepper.


2. Coarse chop the vegetable, place in a large mixing bowl.

3. Add 1 teaspoon salt, 1 teaspoon black pepper, 2 tablespoon canola oil.

4. Mix the vegetables evenly.


5. Place the mixed vegetables on a bake pan.
6. Bake at 400 F for 15 minutes.
