Sweet and Sour Pork with Black Pepper (胡椒糖醋肉)
胡椒糖醋肉 (Hu Jiao Tang Cu Rou)
Do we all crave sweet and sour flavored dishes from time to time? This is actually a very easy dish to make that will sure satisfy your appetite after a long tiring work day, it does take a little bit time to make, but the result is a mouth watering rewarding experience.
This is a perfect kids dish, great for parties and awesome choice for work lunch.

Cooking Time: 45 minutes

Cooking Steps
1. High heat a wok with no oil. The pork meat has enough fat to generate oil.
2. Get 2 lb. pork butt, which has mixed lean and fat texture, cut the pork into 1 inch bite size, add to the wok evenly, no overlap. This makes sure all the meat has direct contact with the host wok surface.
3. Let the pork pan fry for about 20 minutes without flipping them. Wait until the bottom turns light golden brown.
Tip:
The wok surface is not heated evenly due to its shape, move the pork chunks around, the ones in the center of the wok tend to be fried first.
4. Turn the heat to medium. Flip the pork chunks that already turn golden brown. Add a few slices of ginger, chopped green onion, let the pork pan fry for 5 minutes.
5. Add 4 tablespoon soy sauce, 4 tablespoon brown sugar, 2 tablespoon Chinese black vinegar, 1 teaspoon black pepper, stir evenly, turn heat to small, cover and simmer for 10 minutes.
