Salted Garlic Clove (盐渍蒜瓣)
盐渍蒜瓣 (Yan Zi Suan Ban)
I love fresh garlic, but usually use a small portion, this preserving the fresh garlic clove becomes a challenge. Even I put the clove in a dark room, it still starts growing. This is an experiment to see how well the fresh garlic preserves in salt.

Cooking Steps
1. Remove the skin from garlic cloves.
2. Measure 5% salt based on garlic weight. for 80 grams garlic, need 4 grams salt.
3. Place the garlic cloves inside a glass jar, pour the salt in, seal the jar, shake well.
4. Store the garlic in fridge.
