Vietnamese Style Pork and Fish Paste (越式猪肉鱼肉糜)
越式猪肉鱼肉糜 (Yue Shi Zhu Rou Yu Rou Mi)
This pork and fish paste has a very smooth yet elasticity texture, great for making meatballs and filling for dumplings and wontons.

Ingredients
Cooking Steps
1. Get 1 lb. pork meat (shoulder or butt with mixed fat and lean meat is ideal), cut into half inch size cubes.
2. Add the pork cubes into a food processor.
3. Get 1/2 lb. fish fillet (tilapia), cut into one inch size pieces, add to the food processor.
4. Add 4 tablespoon corn starch, 1 teaspoon black pepper, 4 tablespoon fish sauce, 2 tablespoon water, 1 tablespoon sugar, a few drops of sesame oil, process for 2-3 minutes or until the mixture becomes smooth paste.

- 1/2 lb. fish fillet
- 4 tablespoon corn starch
- 4 tablespoon fish sauce
- 2 tablespoon water
- 1 tablespoon sugar
- 1 teaspoon black pepper
- A few drops of sesame oil

Tip:
- Fish sauce could be very salty, thus add water to reduce the saltness, adjust the ratio of fish sauce and water accordingly.
- Fish sauce has very strong smell, sesame oil will add fragrance and suppress the fish sauce smell.
