Pig Nose Salad (凉拌猪鼻)
凉拌猪鼻 (Liang Ban Zhu Bi)
Pig head used to be a delicacy for Chinese New year due to its unique crunchy and chewy texture. We would buy an entire pig head, marinate it with salt, then simmer or steam it. In US, it is hard to find whole pig head these days except in some Chinese supermarket around Chinese New Year. But some Chinese supermarkets might sell pig face, pig nose separately, I bought a pack of pig nose recently to make a very simple salad.

Ingredients
Cooking Time: 45 minutes
Servings: 4
Cooking Steps
1. Buy 1-2 lb. pig nose, sprinkle 3% salt based on the nose weight, marinate overnight.
Example: for 500 grams pig nose, measure 15 grams salt.
2. Add 3 cups of water to a pot, boil (takes about 5 minutes).
3. Rinse off salt from the noses, cut it into a few chunks, add to the boiling water, boil for 5 minutes, turn heat off, dump the hot stock, rinse the cooked nose under running tap water.
4. Add the nose back to the pot, add 3 cups of water, ginger, green onion, boil, then simmer for 45 minutes.
5. Take out the fully cooked pig nose, let it cool down in room temperature.
6. Cut the nose into thin slices.
The pig nose now has slight salty flavor, if not salty enough, dip in soy sauce for more flavor.

- 1 green onion (why buy from store? grow your own green onion)
