10 Minutes Stir Fried Rice with Chinese Mustard and Thai Chili (雪菜泰椒蛋炒饭)
雪菜泰椒蛋炒饭 (Xue Cai Tai Jiao Dan Chao Fan)
This simple stir fried rice with Chinese mustard is great for a healthy work lunch.

Ingredients
Cooking Time: 8 minutes

Cooking Steps
1. Heat a non sticky wok, add 2 tablespoon canola oil, fine chop 1 Thai chili, add to the oil, pan fry for 1 minute or so to let the chili aroma come out.
2. Get 1/2 already marinated Chinese mustard (see mustard marinating steps in this recipe), squeeze the juice out using hands, fine chop further more, then squeeze more juice out, add to the wok, stir fry for 2-3 minutes.
3. Push the chili and mustard to one side of the wok, break 2 eggs to the wok. Cook for 1 minute or so.
4. Measure 1 cup of warm cooked rice, add to the wok, add a pinch of salt, stir evenly to mix all ingredients together.

- 1 pinch of salt
- 1 Thai chili
