10 Minutes Scrambled Egg with Green Onion and Thai Chili (泰椒葱炒鸡蛋)
泰椒葱炒鸡蛋 (Thai Jiao Cong Chao Ji Dan)
Scrambled egg with green onion is a traditional breakfast for Chinese people. It is simple, tasty and has the fresh aroma from green onion. I have been experimenting adding more spices and flavors to this staple Chinese dish. This recipe uses Thai chili to give it an extra kick.

Ingredients
Cooking Time: 5 minutes
Servings: 1-2
Cooking Steps
1. Crack 3 eggs into a medium size bowl, add one chopped green onion, 1/4 teaspoon salt.
2. Use chopsticks to stir and mix the egg evenly.
3. Get a medium size non sticky pan (see How to turn stainless pan into non sticky pan).
4. Heat the pan with medium heat to get rid of any water.
5. Add 1 tablespoon canola oil to the pan, spread the oil evenly, add 1 fine chopped Thai chili to the oil, heat the pan for a few minutes to lightly fry the chili and let the aroma come out.
6. Pour the egg mix to the oil. Cook for a couple of minutes.
7. Stir 2-3 times to let the egg cook evenly.
8. Leave cooked egg inside the pan to be kept warm.
