Fresh Thai Green Chili Oil (泰国绿辣椒油)

泰国绿辣椒油 (Fresh Thai Green Chili Oil)

I love fresh Thai chili, whether it is red or green. However, I do not typically consume large portion of them, thus I have to find a good way to store them. One simple way is to clean and store them in freezer. In this recipe, I am trying a new way to store them, which makesit very easy to use for the future cooking, such as adding the chili oil to noodle soup.

Ingredients
Preparation Time:  5 minutes
Cooking Time:  1 minutes

Cooking Steps

1. Buy fresh Thai green chili, use around 30 of them, rinse clean using water.

2. Place the washed chili on a paper towel to absorb the water. I usually do not discard the paper towel after this type of use, let the paper dry and reuse it next time.

3. Cut the chili stem out (save the chili stem for compost), cut the chili into thin slices horizontally.

4. Place the chili slices into a glass jar.

5. Add around 1/2 cup of canola oil.

6. Microwave the chili and oil in 1 minute or so using power 10. Note every microwave has different power level, watch the boiling process, do not let the oil spill out. Lower the power level and increase the time if needed.

7. Cover the jar.
