自制糯米汤圆 (Zi Zhi Nuo Mi Tang Yuan) Handmade sticky rice ball is much easier than you think. This recipe makes 6 plain sticky rice balls for one person's serving within 10 minutes. A great winter breakfast choice, or night time snack. Store sold rice balls usually have a lot of sugar, those with fillings have a lot of oil as well. Ingredients 40 grams sticky rice flour 1/2 tablespoon sugar Total Time: 10 minutes Yields: 6 rice balls Cooking Steps 1. Add 1 cup of water to a small cooking pot. Add 1/2 tablespoon sugar to the pot for flavor, boil. This takes about 4 minutes with cold water. 2. While waiting for the water to boil. 八宝饭 (Ba Bao Fan) Chinese dessert has many varieties that are so unique and special to its own tradition. I still have the vivid memory of my parents making a special dessert to celebrate Chinese new year, i.e., the steamed sticky rice with 8 treasures. 8 is just a number, it means numerous sweet ingredients used in the recipe, mostly dried fruits and red bean paste. In the old days, making this dessert required lots of effort, it was only made during the spring festival when people had plenty spare time. The hardest part of making this dessert in a traditional way is to make the red bean paste, which took a few hours. It started with simmering the red bean for a couple of hours, then removing the bean skin, consolidating the bean starch, then boiling the bean starch with sugar and pork fat. 韭菜虾仁春卷 (Jiu Cai Xia Ren Chun Juan) A super delicious traditional Chinese spring roll that uses Chinese leek and shrimp. Spring roll (春卷) is a traditional delicacy that was usually only consumed during Chinese new year, when people had feasts after one year of hard work. Due to the nature of deep frying, they are not typically consumed on a daily basis. Yellow Chinese leek (韭黄) is probably the best spring roll filling. Yellow Chinese leek has a unique flavor, it is usually only available during winter season, it takes special steps to grow, thus it is very pricy.
