Dim Sum Shrimp Dumpling Filling with Shrimp and Bamboo Shoot (虾仁笋丁馅)

虾仁笋丁馅 (Xia Ren Sun Ding Xian)



Shrimp dumpling is one of my favorite dim sum entrees, the tender and juicy texture of the shrimp is definitely unforggetable for any dim sum experience. It turns out that you can make it at home easily with a fraction of the cost you pay at the dim sum restaurant. This recipe shows you how to make the shrimp filling.

Ingredients
  • 1/2 lb. shrimp
  • 1/2 lb. bamboo shoot
  • A few drops of sesame oil
  • 1 tablespoon corn starch
  • 1 teaspoon salt
  • 1 tablespoon canola oil
  • 1 tablespoon sugar
  • 1 green onion (why buy from store? grow your own green onion)
Preparation Time: 10 minutes
Servings: filling for about 24 shrimp dumplings

Steps:

1. Get 1/2 lb. shrimp, remove shell and veins, rinse clean, cut into small bits. Place in a medium or large mixing bowl.
2. Get 1/2 lb. bamboo shoot, I usually buy the frozen spring bamboo shoot in Chinese grocery store, since they are available year round and the price is very reasonable. Thaw and rinse clean, cut into small bits. Add to the mixing bowl.

Tip: Bamboo adds crunchness to the filling, if bamboo shoot is not available, substitute with other ingredients, for example, carrots, corn, or vegetable you like.
3. Get one fresh green onion, rinse clean, cut off root, cut into small bits. Add to the mixing bowl.
4. Add 1 tablespoon oil, 1 tablespoon corn starch, 1 teaspoon salt, a few drops of sesame oil to the mixing bowl, mix all ingredients evenly.
