红烧肉炖慈菇 (Hong Shao Rou Dun Ci Gu) Believe it or not, today it was my first time to see arrowhead, a type of root vegetable, in a Chinese supermarket in North America. I could not hide my excitement and surprise, plus the price is so reasonable : $2.29/lb. The arrowhead is abundant in southern region of mainland China, it grows in wetland. 牛肉清汤 (Qing Tang Niu Rou) Making delicious beef dishes always takes some extra effort or technique, this is because beef's texture is so different from chicken and pork. For example, chicken or pork soup does not usually need to preboil the meat, however, for beef soup, because beef meat has lots of blood content, it requires preboiling and removing the bloody foam. The resulting soup is very clear, that is why it is called "清汤", which means "clear soup". It can be eaten as a dish on its own, just put soup and beef chunk to a bowl, sprinkle salt and black pepper.  It can also be a great stock for lots of noodle dishes. 干煸牛柳 (Gan Bian Niu Liu) Over so many years of my cooking life, beef is not really a frequently used ingredient in my dinner menu. One reason is that beef's texture is not as tender as pork, it is very hard to make quick stir fry and still keep the beef tender and juicy. Get 1 yam about 1 lb., rinse clean, use a knife to remove the skin, cut into 3/4 inch wide 2 inch long slices.
