Dim Sum Filling - Shrimp with Chinese Leek and Pork (韭菜虾仁肉丁馅)

Shrimp dumpling is one of the signature dim sum entrees, I love it so much, I always make one or more orders when I visit dim sum places. The good news is that you can easily make it at home with only a fraction of restaurant price.

Ingredients
- 1/4 lb. Chinese leek (available in most Chinese supermarkets year round)
- 1/2 lb/ shrimp
- 1/4 lb. pork (preferably with some fat in it)
- 1 tablespoon canola oil
- 1 tablespoon corn starch
- 1 tablespoon sugar
- 1 teaspoon salt
Servings: filling for 16-24 shrimp dumplings
Cooking Steps
1. Get 1/4 lb. Chinese leek (available in most Chinese supermarkets year round, abundant in summer time while prices are low). Soak in a container, remove dirt, rinse clean, cut into small bits, add to a large mixing bowl.
2. Get 1/2 lb. shrimp, remove skin and veins, rinse clean, cut into small bits, add to the mixing bowl.
3. Get 1/4 lb. pork meat with fat content, cut into small bits, add to the mixing bowl.
Tip: The fat in the pork adds flavor and tender texture to the filling. However, you can use leaner cut to your own taste.
4. Add 1 tablespoon corn starch, 1 tablespoon sugar, 1 teaspoon salt, 1 tablespoon canola oil, a few drops of sesame oil to the mixing bowl, use chopsticks to mix the ingredients evenly.
