豆豉蒸排骨 (Dou Chi Zheng Pai Gu)


Steamed pork riblet with fermented black bean is one of most popular dim sum entrees. The tender riblet has the sweetness mixed with the unique flavor of fermented black bean.

You can easily make this dish at home with only a fraction of the restaurant price.

Ingredients
  • 1/2 lb. Pork riblet
  • 2 tablespoon fermented black bean ( 豆豉,available in most Chinese grocery store)
  • 1/4 teaspoon salt
  • 1 tablespoon sugar
  • 1 tablespoon corn starch
  • A few slices of ginger
  • 1 green onion (why buy from store? grow your own green onion)
Preparation Time:  5 minutes (with 30 - 60 minutes of marinating time)
Cooking Time:  20 minutes
Servings: 4

Cooking Steps
1. Get 1/2 lb. Pork riblet, rinse clean, cut into 1 inch size piece.
2. Add the riblet to a shallow bowl or plate, add 1 tablespoon sugar, 1/4 teaspoon salt, 1 tablespoon corn starch, mix evenly. For best result, marinate for 30 to 60 minutes.
3. Add 1 fine chopped green onion, a few slices of ginger, 2 tablespoon fermented black bean to the meat, mix evenly.
4. Place the plate inside steamer, after water boils, steam for 20 minutes.
