Stir Fried Napa Cabbage with Shrimp (虾仁烩白菜)
虾仁烩白菜 (Xiā Rén Huì Bái Cài)
Since I love the Napa cabbage as a healthy leafy vegetable, l want to experiment more quick ways to make stir fried dishes using it. This is one of the experiments. I used chicken stock and shrimp to add more flavor to the dish, the generous portion of Napa cabbage makes it an ideal vegetable dish to complete any meals.

Ingredients
- 1 lb. Napa cabbage
- 1/3 lb. shrimp
- 1 cup of chicken stock
- 2 tablespoon canola oil
- 1 teaspoon salt
- A few slices of ginger
- 1 green onion (why buy from store? grow your own green onion)

Cooking Steps
1. Get 1 lb. Napa cabbage, rinse clean, drain, cut into 1 inch size diamond shapes. Sprinkle 1 teaspoon salt, toss evenly, marinate 20 minutes.
Tip:
- Napa cabbage has lot of water in it, without marinating and squeezing the water out, it can become very soggy after being stir fried. Marinating it with salt will add flavor as well.
3. After the Napa cabbage is marinated for about 20 minutes, squeeze the water out of the cabbage using hand.
4. Heat a wok using high heat, add 2 tablespoon canola oil, add a few slices of ginger and 1 coarse chopped green onion, stir briefly for 1 minute or so to let the fragrance of the ginger and onion come out.
5. Add the Napa cabbage, stir fry for about 3 minutes.
6. Add 1 cup of chicken stock to the wok, stir evenly, cook for about 2 minutes.
7. Add the shrimp to the wok, stir all ingredients evenly for 2-3 minutes or until the shrimp is fully cooked. Take out and place in a large bowl.
Tip:
- Because the Napa cabbage has already been marinated with salt, chicken stock might have salt in it as well, there is no need to add extra salt. However, do taste the dish and add salt as needed.
