Hunan Style Stir Fried Pork Slices with Jalapeno (湖南小炒肉)

Ingredients
- 1/2 lb. pork shoulder butt roast
- 1 jalapeno
- 1 tablespoon canola oil
- 1 tablespoon soy sauce
- 1 teaspoon sugar
- A few slices of ginger
- 1 green onion (why buy from store? grow your own green onion)
- A few cloves of garlic

Cooking Steps
1. Get 1/2 lb. pork shoulder or butt meat (ideally with some fat in the meat), cut into 1-2 inch size thin slices.

- If freeze the meat first, then thaw a little bit, it will be very easy to cut the meat into very thin slices.

- Pan frying the pork slices will make the meat very fragrant and a little bit crispy. The fat from the meat will come out as well. So this stir fry only uses 1 tablespoon of canola oil. If you prefer even healthier version, you can even skip the canola oil, since the fat from the meat will be enough to cook the whole dish.
4. While the pork slices are being pan fried. Prepare a few slices of ginger, 1 coarse chopped green onion, a few cloves of garlic. Rinse clean 1 jalapeno and cut into thin slices.
Tips:
- Depending on how much you can tolerate the spiciness of the jalapeno, adjust the jalapeno amount accordingly. Add more if you love the heat.
- The spiciness of the jalapeno mostly comes from the seeds, you can discard the seeds if you prefer mild flavor.
6. Add 1 tablespoon soy sauce, 1 teaspoon sugar, stir fry for 1-2 minutes or until all the ingredients blend well.
