Roast Pork Butt with Salt and Black Pepper (椒盐烤猪肉)
椒盐烤猪肉 (Jiao Yan Kao Zhu Rou)
Roast pork butt is no doubt our favorite pork recipe and most frequently made dish. It is super simple, the roasted meat is so tender, juicy and tasty. The best part is that it only takes about 5 minutes to prepare, once it is in the oven, you are basically hands free. Take advantage of the juice to make a delicious gravy.

Servings: 6-8
Cooking Steps
1. Get 2 lb. pork butt meat, if the chunk is too thick, split the meat, but do not cut through, leave 2 inch edge connected. This will reshape the meat into 2 inch thick chunk.
Note the thicker the meat, the harder and longer it takes to bake. Leaving the meat around 2 inches thick will limit the total baking time to 1 hour or so.
2. Sprinkle generous amount salt (2 tablespoon) and black pepper (2 tablespoon) to the entire surface of the meat.
Note: reduce the salt to your taste if needed.
3. Place the pork onto an alum sheet, if the meat has a thick layer of fat on one side, place the fatty side on the top.
4. Bake for 1 hour at 400 F. Adjust the time accordingly depending on the total weight of the meat and the thickness.
5. Make a tasty gravy out of the juice.
