Simmered Beef Heart with Ginger and Green Onion (葱姜煮牛心)

葱姜煮牛心 (Cong Jiang Zhu Niu Xin)



I recently discovered that beef heart is much cheaper than other cuts of the beef, the great price encouraged me to try my first beef heart recipe: in a simple Chinese way only with ginger, green onion and salt.

Ingredients
Preparation Time:  20 minutes
Cooking Time: 120 minutes
Servings: 4

Cooking Steps
1. Get 1 medium size pot, add 4 cups of water, boil.
2. Get 1 lb. Beef heart, cut into 2 chunks, add to the boiling water, boil, then simmer for 10 to 15 minutes.
3. Pour the hot water out of the pot, rinse clean the cooked heart chunks, place the heart back to the pot.

Tips:
Beef heart has blood content in it, this step will cook out all the blood as much as possible to avoid the odor from blood.
Any cut of meat with strong odor, such as pork heart, pork stomach, etc, can all be pre processed this way to get rid of the odor.

4. Add 4 cups of water, a few slices of ginger, 1 coarse chopped green onion, 1 teaspoon salt, boil, the cover and simmer for 2 hours.


Tips: The cooked beef heart can be cut into slices and served as simple salad, just dip in soy sauce, chili oil or any sauce you love. The slices can be used in stir fried dishes with jalapeno, onion or Chinese leek or vegetables with strong aroma, more recipes are coming, stay tuned!
