Stir Fried Rice with Green Bean and Roast Beef (四季豆牛肉炒饭)
四季豆牛肉炒饭 (Si Ji Dou Niu Rou Chao Fan)
Every time when we hear about stir fried rice, we would typically think stir fried rice with egg. Now I start playing with all kinds of ingredients. This dish is a good start. Having green bean, beef, and rice in the same dish makes a great one pot meal. And it is a great way to utilize leftovers.

Ingredients
- 1/2 lb. Green beans
- 1/4 lb. Roast beef (Leftover or freshly made)
- 1 lb. Leftover rice (or fresh cooked rice)
- 1 green onion (why buy from store? grow your own green onion)
Cooking Time: 10 minutes
Servings: 4
Cooking Steps
1. Get 1/2 lb. Green beans, rinse clean, cut into small bits, remove any hard stem attached.
2. Add 1 tablespoon canola oil to a non sticky wok, use medium heat, stir evenly, cover the wok to pan fry for about 5 minutes or until the bean is fully cooked, stir a couple of times.
3. Get 1/4 lb. Roasted beef, cut into small bits, add to the wok, stir evenly, cover and cook for 2 minutes or so.
4. Microwave 1 lb. Leftover cooked rice, add to the wok, sprinkle 1 fine chopped green onion, stir fry for about 2 minutes.
