Stir Fried Okra and Jalapeno with Chicken Slices (秋葵墨椒炒鸡丁)

I never had any okra dish back in China, and I never made any okra dish until today. To my surprise, my first okra dish turned out to be a success.

Ingredients
- 1/4 lb. Okra
- 1 jalapeno
- 1/4 lb. Chicken meat
- 2 tablespoon canola oil
- A pinch of salt
- A pinch of sugar
- A few slices of ginger
- 1 green onion (why buy from store? grow your own green onion)
Cooking Time: 8 minutes
Servings: 2
Cooking Steps
1. Get 1/4 lb. Okra, rinse clean, cut into thin and long slices.
2. Get 1 jalapeno, cut into thin and long slices.
3. Add 2 tablespoon canola oil to a wok, use medium heat, add the okra and jalapeno slices to the wok, stir evenly, cover and pan fry for 2 minutes, stir, cover and pan fry for 1 minute or until the okra and jalapeno turn soft.
4. Get 1/4 lb. Chicken meat, cut into small slices, add to the wok, add a few slices of ginger and 1 coarse chopped green onion, stir all ingredients evenly, cover and pan fry for 2 minutes, stir, pan fry for 1 minute or until the chicken meat is fully cooked.
5. Sprinkle a pinch of salt and sugar, stir evenly for 1 minute.
