Mung Bean Noodle Soup with Precooked Pork Slices ( 肉丝粉丝汤)
肉丝粉丝汤 (Rou Si Fen Si Tang)
This is a very light breakfast dish, especially when you crave a warm soup in the morning.
Make the precooked pork slices before hand, so you can use it any time you want.

Ingredients
- 30 to 50 grams mung bean noodle (available in most Chinese grocery stores)
- A few spoons of precooked pork slices
- 1 green onion (why buy from store? grow your own green onion)

Cooking Steps
1. Get a medium pot, add 2 cups of water, boil. Add 30 to 50 grams of dried mung bean noodle, use chopsticks to press all noodle in the water.
2. Boil, then cover and simmer for about 5 minutes, or until the noodle becomes soft to your taste.
3. Get a medium size bowl, add 1 cup hot chicken stock. Or add 1 cup boiled water and add some beef or chicken soup base for flavor. Place the mung bean noodle in the bowl.
4. Add a few slices of fresh green onion, a few spoons of precooked pork slices. Serve.
