Thai Style Chicken Salad (泰式凉拌鸡)

泰式凉拌鸡 ( Tai Shi Liang Ban Ji) It is always fun to try different style of cuisine. This simple chicken salad is my first experiment with the unique Thai ingredient such as fish sauce. Chicken leg quarter 2 tablespoon salt for marinating  1 teaspoon salt for cooking the chicken For sauce:  2 tablespoon rice vinegar 2 tablespoon fish sauce 1 tablespoon sugar 2 red chili Fresh vegetable: 1/3 cup cucumber slices 1/3 cup red onion slices 1/3 cup coarse chopped cilantro 1/3 cup crushed roasted peanuts A few slices of ginger 1 green onion (why buy from store? grow your own green onion ) Preparation Time:  10 minutes with overnight marinating Cooking Time: 90 minutes Servings: 4 Cooking Steps 1. 绍兴花雕醉鸡 (Shao Xin Hua Diao Zui Ji) Chicken salad with traditional wine from Shao Xin region is a very popular dish. I have been thinking of trying this recipe for a while. 五分钟微波炉自制辣椒油 (Wu Fen Zhong Wei Bo Lu Zi Zhi La Jiao You) Chili oil is my favorite condiment for many types of noodle soups, especially the wonton soup. The simple spicy flavor is a perfect company to soups that are going to warm you soul in cold and wet days. You can make the chili oil easily at home, this recipe onle takes 5 minutes and saves you the hassle of cleaning any pots and pans. Recipes by Category . Ingredients 1/2 cup  canola oil 2 tablespoon chili powder Preparation Time: 2 minutes Cooking Time: 1  minute Cooking Steps 1. Get a clean and dry glass container (you can reuse pickle container, jam container). 2. Place 2 tablespoon chili powder to the jar, add 1/2 cup of canola oil,  use chopstick or spoon to mix the oil and the chili powder evenly. 3. Use microwave high power to cook 1-2 minutes or until the oil is bubbling. Tip: Microwaves have different powers, so cook 30 seconds in multiple times, watch if the oil bubbles, if so, then no need to cook more.  

Spicy Beef Salad Using Roast Beef (凉拌麻辣牛肉)

凉拌麻辣牛肉 (Liang Ban Ma La Niu Rou) Spicy beef salad is a very popular Si Chuan style dish, the spiciness will sure bring the appetite out of you. Traditionally, the beef is boiled for long time to make it tender. Beef chuck roast 1.5 teaspoon salt 2 teaspoon black pepper 1 green onion (why buy from store? grow your own green onion ) Preparation Time: 5 minutes Cooking Time: 60 minutes Servings: 4 Cooking Steps 1. Follow the steps in  beef chuck roast. 2. Let the roast beef cool down, cut 1/3 lb.of the meat. 2. Get a medium bowl, add the following ingredients:     1 tablespoon soy sauce     1/4 teaspoon Si Chuan pepper powder     2 tablespoon chili oil,     1 tablespoon sesame seeds     1 fine chopped green onion      A few drops sesame oil 3. 葱油萝卜丝 (Cong You Luo Bo Si) Daikon is a very inexpensive traditional Chinese vegetable, abundant in most Chinese grocery stores year round. This is a very popular daikon salad recipe in Chinese cuisine. I added Thai chili to give it a hot kick, you can skip the Thai chili if you prefer a mild flavor. This simple dish combines opo squash, napa cabbage and corn together, so you only need to prepare one vegetable dish to get nutrition from a varieties of vegetables. 肉丝粉丝汤 (Rou Si Fen Si Tang) This is a very light breakfast dish, especially when you crave  a warm soup in the morning. Simplest Stir Fried Pork Slices (炒肉丝)

炒肉丝 ( Chao Rou Si) Stir fried vegetable with pork slices is very popular dish in Chinese cuisine. However, most of the times, I was just too lazy to get a chunk of frozen meat out of the freezer, thaw it and cut it cold. I came up with this recipe to stir fry the pork slices ahead of time, just place this ready to use dish in the fridge, and use the portion you like for quick stir fry dishes whenever you get home and prepare your dinner menu. You can also use it as the topping for lots of noodle soups, for example, in this 10 minutes  mung bean noodle soup .
