Thai Style Chicken Salad (泰式凉拌鸡)

泰式凉拌鸡 ( Tai Shi Liang Ban Ji) It is always fun to try different style of cuisine. This simple chicken salad is my first experiment with the unique Thai ingredient such as fish sauce. Chicken leg quarter 2 tablespoon salt for marinating  1 teaspoon salt for cooking the chicken For sauce:  2 tablespoon rice vinegar 2 tablespoon fish sauce 1 tablespoon sugar 2 red chili Fresh vegetable: 1/3 cup cucumber slices 1/3 cup red onion slices 1/3 cup coarse chopped cilantro 1/3 cup crushed roasted peanuts A few slices of ginger 1 green onion (why buy from store? grow your own green onion ) Preparation Time:  10 minutes with overnight marinating Cooking Time: 90 minutes Servings: 4 Cooking Steps 1. 绍兴花雕醉鸡 (Shao Xin Hua Diao Zui Ji) Chicken salad with traditional wine from Shao Xin region is a very popular dish. I have been thinking of trying this recipe for a while. The simple spicy flavor is a perfect company to soups that are going to warm you soul in cold and wet days. This is a very popular daikon salad recipe in Chinese cuisine. I added Thai chili to give it a hot kick, you can skip the Thai chili if you prefer a mild flavor. 炒肉丝 ( Chao Rou Si) Stir fried vegetable with pork slices is very popular dish in Chinese cuisine. However, most of the times, I was just too lazy to get a chunk of frozen meat out of the freezer, thaw it and cut it cold. I came up with this recipe to stir fry the pork slices ahead of time, just place this ready to use dish in the fridge, and use the portion you like for quick stir fry dishes whenever you get home and prepare your dinner menu. You can also use it as the topping for lots of noodle soups, for example, in this 10 minutes  mung bean noodle soup .
