Ingredients
- 1 Chinese eggplant
- 1 Chinese sausage
- 1 jalapeno
- 1 tablespoon canola oil
- 1 clove of garlic
- 1 pinch of salt and sugar
- 1 green onion (why buy from store? grow your own green onion)

Cooking Steps
1. Get 1 Chinese eggplant, rinse clean, cut off the stem. Cut into 3 to 4 sections. 2.Place the eggplant sections on a microwaveable plate, use high power to microwave for 2 minutes. Adjust the time accordingly, make sure the eggplant is fully cooked and soft.
3. Let the cooked eggplant cool down in room temperature, or rinse briefly under running cold water.
4. Get 1 Chinese sausage, cut into thin slices.
5. Clean 1 jalapeno, cut into thin slices.
6. Prepare 1 clove of minced garlic and 1 fine chopped green onion.
7. Add 1 tablespoon canola oil to a wok, add the Chinese sausages, jalapeno, garlic and green onion, use medium heat to cook for about 2 to 3 minutes, cover the wok and stir a couple times to evenly cook the ingredients,
8. Once the eggplant cools down, use fingers to tear into long and narrow slices,
9. Once step 5 is done, add the eggplant slices onto the wok, stir evenly, add a pinch of salt and sugar, stir fry for about 3 minutes.
