Homemade Noodle using Pasta Maker

I love homemade noodle soup, no store sold version can beat the freshness and unique texture from homemade version. I have posted a handmade noodle recipe, it is very easy to make, the only problem is that it needs quite some labor, and most suitable for small groups of people. When we need to make large portions of noodles, getting help from a machine saves is well worth it.

I recently purchased an Italian made pasta maker, I could not wait to give it a try. It took no time to start using it, even without reading the menu first.

Now it comes the hard part: what pasta recipe should I use?

I looked at a few pasta noodle recipes online, they all use egg. What will be simplest noodle recipe? And this recipe is my answer.

One small tip is that the dough used by the pasta maker needs to be relatively drier, otherwise the dough will be easily stuck in the machine. It will be super helpful if you have a bread maker or any other tool to make the dough for you.

Ingredients
  • 2/3 cup of water 
  • 3 cups of all purpose flour
Preparation Time:  30 minutes
Servings: 6-8

Cooking Steps

1. Add 2/3 cup of water and 3 cups of all purpose flour to a bread maker or other dough mixer, use the dough setting for a bread maker to mix the dough until it becomes smooth, this might take 10 minutes.
2. Divide the dough into 6-8 portions. Get one individual portion of dough, smooth it, and use the roller of the pasta maker to make a flat dough sheet first. There are many settings of the thickness of the roller, from 1 to 9, I typically use 3.
3. Place the flat dough sheet in the cutter of the pasta maker, roll the handle to cut the dough sheet into long strings of noodles. Place a tray to catch the noodles. Sprinkle a little bit flour onto the noodle to prevent them from sticking each other. If you have a noodle hanger,

Tip:
If you make more noodles than you can eat, simply place the noodle loosely on a plastic tray or box, wrap it with plastic bag to seal it and freeze it. Next time when you need to make the noodle dish, just take out the frozen noodle, add to boiling water directly, use chopstick or fork to set loose the noodle in the boiling water. There is no need to pre thaw the frozen noodle.
