Bamboo leaves have the unique fragrance that goes well with many steamed dishes. It blends well with the black boned chicken as well. Marinating the chicken overnight with salt makes the chicken very tasty and tender.

Ingredients
- 1 black boned chicken
- 2% salt based on the weight of the chicken
- 4 large dried bamboo leaves (available in most Chinese grocery stores)
- A few slices of ginger
- 1 green onion (why buy from store? grow your own green onion)
Cooking Time: 90 minutes

Cooking Steps
1. Get 1 black boned chicken, measure 2% salt based on the weight of the chicken. Sprinkle the salt evenly on top and inside of the chicken. Marinate overnight for best result.
2. Get 4 sheets of dry bamboo leaves, soak in water overnight.
3. Rinse clean the chicken inside and out to remove the salt. Rinse clean the bamboo leaves.
4. Put one coarse chopped green onion and a few ginger slices inside the chicken body.
5. Get a large bowl, place the bamboo leaves on the bottom of the bowl, place the chicken on top of the bamboo leaves, Wrap the chicken top by pulling 2 bamboo leaves out a little bit.
6. Steam the chicken for 90 minutes.
