Oil Free Pan Fried Spicy Chicken Stew with Salted Black Bean (麻辣豆豉鸡)
麻辣豆豉鸡 (Málà dòuchǐ jī)
Salted black bean is a traditional ingredient used in many Chinese regional cuisine. This spicy chicken wing and leg quarter stew adds salted black bean to have another layer of flavor. It will sure stimulate your appetite during any season of the year, it is a great lunch dish choice.

Ingredients
- 1.5 lb. chicken wing
- 1 lb. chicken leg quarter
- a few slices of ginger
- 1 coarse chopped green onion
- a few cloves of garlic
- a pinch of peppercorn
- 1 tablespoon Broad Bean Chili Paste (郫县豆瓣)
- 1 tablespoon Lao Gan Ma (老干妈) chili paste
- 3 tablespoon salted black bean (豆豉)
- 1 tablespoon soy sauce
- 1 tablespoon sugar
Cooking Time: 35 minutes

Cooking Steps
1. Get 1.5 lb. chicken wing, 1 lb. leg quarter, marinate with 2% salt in the fridge overnight for best result. If you are in a hurry, you can skip this step.
Tip:
- Chicken wings and leg quarter are my favorite parts of the chicken. You can use any parts of the chicken of your choice.
3. Heat a non sticky wok, place the wing and leg pieces evenly onto the wok, no overlaps, cover and use medium heat to pan fry for 15 minutes, or until the bottom side turns golden brown.
4. Flip the wings and leg pieces to pan fry the other side for 10 minutes or until the bottom side turns golden brown.
5. Push the wing and leg pieces to one side of the wok, add the ingredients to the other side of the wok:
- a few slices of ginger
- 1 coarse chopped green onion
- a few cloves of garlic
- a pinch of peppercorn
- 1 tablespoon Broad Bean Chili Paste (郫县豆瓣)
- 1 tablespoon Lao Gan Ma (老干妈) chili paste
- 3 tablespoon salted black bean (豆豉)
- 1 tablespoon soy sauce
- 1 tablespoon sugar
- Since the chicken has been marinated with salt overnight, and the chili paste, the salted black bean all have salt in it, the soy sauce amount is reduced to 1 tablespoon only.
7. Stir fry the wing/leg pieces and the rest of the ingredients evenly for 5 minutes or so.
