King ouster mushroom 1 teaspoon salt and extra salt for marinating A few slices of ginger 1 green onion (why buy from store? grow your own green onion ) Preparation Time:  10 minutes Cooking Time:  30 minutes Servings: 4 Cooking Steps 1. Get 1 lb. chicken wings, marinate with 2% salt overnight in the fridge for best result, the meat will be tender and tasty. You can skip this step if you are in a hurry. 2. 干煸四季豆 ( Gan Bian Si Ji Dou) You will probably see this dish on lots of Chinese restaurants' menu. The truth is, it is so simple to make at home for 30 minutes . Pork meat (with some fat) 2 tablespoon canola oil 3 tablespoon soy sauce 1 teaspoon salt Preparation Time:  5 minutes Cooking Time:  25 minutes Servings: 2 Cooking Steps 1. Get 1/4 lb. pork meat, cut into thin slices. Use meat with mixed fat to get more flavors. Add the pork slices to a dry wok, use medium heat to pan fry for about 10 minutes. Stir a few times to let the meat evenly cooked. Cover the wok while pan frying. Tip: There is no need to add extra oil if the meat has mixed fat, otherwise, if the meat is pretty lean, add 1 tablespoon canola oil first. 2. 油炸大虾 (You Zha Da Xia) I guess everybody has craved deep fried food from time to time. This is what happens to me recently. Deep fried food is always a challenge for me though, because it is so hard to find a simple enough batter that will yield perfectly crispy shrimps , until today. Ingredients The simplest batter for deep frying good for 2 lb. seafood 2 lb. large prawns  about 1 cup canola oil that will be 1 inch deep in medium size pot   Preparation Time: 10 minutes Cooking Time: 30 minutes Cooking Steps 1. Prepare the simplest batter for deep frying . 2. Prepare 2 lb. large prawns. Remove shells and veins. 3. Get a medium size pot, add about 1 inch deep canola oil. Use medium high heat to heat for about 4-5 minutes. Tips: Use wood or bamboo chopsticks to dip in the oil, if there are bubbles coming out around the chopstick, that means the oil is hot enough for deep frying. 油炸食物用的面糊 (You Zha Shi Wu Yong De Mian Hu) I have been searching for the perfect batter for deep frying food for a while, and now I can claim I found one that is too simple to make a mistake. Ingredients 1 cup all purpose flour 1/2 cup corn starch 3/4 cup milk 1 egg Preparation Time: 5 minutes Servings: deep frying batter for about 2 lb. seafood or other meat Preparation Steps 1. Measure 1 cup all purpose flour, put in a large mixing bowl. 2. Measure 1/2 cup corn starch, add to the bowl. 3. Measure 1 teaspoon salt, 1 teaspoon black pepper, add to the bowl, using chopsticks to mix the ingredients evenly. 4. Add 3/4 cup milk (I use 2% milk), 1 egg to the bowl, mix all ingredients evenly. Note: The above portion can be used for deep frying about 2 lb. seafood or other meat.
